What websites see

While the VPN is on, sites see the address of the VPN server, not yours. They decide the country from their own IP databases, and different databases can disagree: a server may be shown in a neighbouring country for a while.

Sites where you are signed in still know your account; some services also use your phone's language, time zone or payment country.
